Dip your feet in the water, the chill jolts you. The cool water dances at the tip of your toes – making you smile and remember where you are.

The blanket of ocean lies in front of you, never still, its motion calms you and awakens you to the tug of the line and the yank of the rod.

You drag your catch in, it fights a little but surrenders with just enough gusto to make you feel worthy of its strength. You feel satisfied; content that you’ve achieved what you set out to do. The flathead will be perfect, grilled simply, with a touch of seasoning and a lot of care.

You did it. You did what you hoped you would.

Grilled Flathead

 4 x 100g fillets flathead

Olive oil

2 lemons

Salt and black pepper

Season the flathead with salt and pepper and grill on a preheated very hot grill pan for 2-3 minutes. Turn over and sear for a further 2-3 minutes.

Turn out onto a plate and squeeze lemon juice over the fish to taste.
